studies","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"福井県産紅映梅果汁粉末が持つ細菌増殖抑制効果を利用して,梅果汁粉末を白飯へ添加することにより食中毒予防効果が期待できることをこれまでに報告してきた.本研究では,製品化にあたり残っている3 つの課題について検証を行った.\n最初に,未消毒の手指による不衛生な調理でにぎりめしに付着した手指由来の細菌に対しても増殖抑制効果があるか検証した.その結果,汚染指標菌の表皮ブドウ球菌とほぼ同等の増殖抑制効果が得られることが明らかになった.次に,炊飯後に添加する従来法では,大量の白飯に梅果汁粉末を均一に混和することは困難であったため,炊飯前の浸漬水に混和してから炊飯する方法を検討した.その結果,炊飯前に浸漬水へ添加することにより,炊飯加熱後に細菌増殖抑制効果を減弱させることなく,炊飯後の白飯全体に均一に混和させられることが証明された.最後に,梅果汁粉末および製品化された「Safety Ball の素」の細菌増殖抑制効果の有効時間を検証したところ,調理後,30℃で72 時間保存した後でも,検出された細菌数は食中毒発症の危険水準である106 個/g
