年3月東日本大震災により,福島第一原子力発電所は事故に見舞われ,近隣地区の人々は放射性物質による被曝が考えられた.食品中の放射性物質の含量についての報告は多くなされているが,調理の下処理による放射性セシウム137 の変化についての報告はほとんど見られない. 本報では福島県双葉郡川内村産の17 食品31 試料の放射性セシウム137 の調理下処理前の含量と,これらを5 つの下処理法の1または2方法を行った34 試料の下処理後の含量を測定し,減少率を算出した.下処理前の含量では,きのこ4 品,山菜5 品,果物5 品,野菜17 品の順に平均158.11,15.89,12.89,2.36Bq/kg であった.料理の下処理後の減少率は,根菜ときのこの7 試料の「洗う」では平均6.9%,果物と根菜の11 試料の「洗う・むく」は12.5%,根菜7 試料の「洗う・むく・茹でる」は74.4%,葉菜5 試料の「洗う・茹でる」は75.2%,山菜7 試料の「アク抜き」は74.3%
