studies","bibliographic_titleLang":"en"}]}]},"item_10002_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":"食品表示法施行の前後3年にネット販売で扱われていた塩分低減しょうゆの表示内容を調べた.塩分低減を示す表現は,「塩分〇%カット」,「減塩」の順に多く使用され,低減表示の比較基準は日本醤油協会の「しょうゆの表示等に関する業界申し合わせ」に示された値を使用している製品が約6~ 7割で最も多く,次が日本食品標準成分表値であった.また,食塩相当量の表示は2018年で正しく表示されていない製品が約1/4あり,また,食品表示法では表示できないナトリウム量を表示している製品が7割以上もあり,後者については,記載が解釈しづらいことが原因と考えられた.比較基準値からみた塩分低減率は,食塩相当量の表示値から求めた値が実測値から求めた値よりも低減率が大きい傾向にあり,更に,食塩相当量の実測値が、表示値より20 %以上高い製品が食品表示法施行の前後3年に各々3割近くあり,その原因として100 g中と100
