割を超えている.一方,東日本大震災では,避難所で乳幼児や高齢者を対象とした食事の提供ができなかったとされる.災害時に要配慮者が食べられるアルファ化粥,アルファ化米粉の物性についてえん下困難者用食品の許可基準で評価した.アルファ化粥を水で調製した場合,テクスチャー測定項目の値は,いずれも規格基準Iになった.しかし,米粒が不均質な状態であることから「許可基準III」であった.アルファ化粥の粒を残さない調整方法として,手で潰す,酵素剤を使用するなどしても,均質な状態にならず「許可基準III」となった.一方,備蓄されていないアルファ化米粉を水で調製した場合,「許可基準II」の調製は可能であった.アルファ化米粉を備蓄しておくと,災害フェーズ0 ~ 1
